Scallop, Squid, Shrimp, Chicken, Duck, Gai-Lan, Egg, Tobiko

Shrimp mostly tastes like fish, with slight taste of chicken, it can also be crunchy.  The antioxidant astaxanthin in shrimp helps prevent wrinkles and lessens sun damage.

Squid is a good source of protein, omega-3 fatty acids, vitamin C, iron and calcium. Most of the health benefits of squid are a result of omega-3 fatty acids that maintain good heart health, pregnancy health, heathy skin, hair and nails and reduce the symptoms of rheumatoid arthritis. When  cooked over medium heat, squid tends to have a mild flavor similar to that of shrimp and lobster.

Mushrooms add a wonderfulearthy flavourto savoury dishes. Find classics like mushroom sauce, mushroom risotto, mushroom soup, stuffed mushrooms and other mushroom recipes. We have recipes that feature shiitake, oyster, enoki, portobello, chanterelle, Swiss brown and many more.

Gai lantastes a little like head broccoli but it's crunchy stems and thick leaves give it a flavour all its own. The stems, leaves and flower buds can all be stir fried, steamed or added to soups and casseroles. Thick stems should be cut in half and added before the leaves as they take longer to cook.

Duck has astrong flavor, closer to red meat than chicken, for example. It is also fattier and, if cooked the right way, it has a delicious taste that's tender, moist, and fatty—the perfect protein combination for meat lovers. Ducks' skin is a lot thicker and fattier than turkey or chicken.

The consistency is soft, stringy and sometimes slightly grainy. The flavor isslightly salty and mild with slight yeasty notes. Chicken tastes a bit like a mild sourdough bread but denser, more moist, more fine grained, more proteiny and stringy.

Tobiko is traditionally salt-cured and will typically have asmoky, salty taste. However, tobiko tends to be a little sweeter than other types of roe, such as caviar or ikura. Tobiko is rich in protein, omega-3 fatty acids and other nutrients. Similar to salmon eggs, tobiko is high in phospholipid fat that can help protect the heart and liver, reduce inflammation, and improve learning ability.
