Baijiu is China’s traditional grain spirit and one of the most widely consumed spirits in the world. Typically distilled from sorghum and other grains, Baijiu is known for its bold and complex flavours, ranging from fruity and floral to savoury, earthy, and umami.

Often reaching 40% to 60% ABV, Baijiu is traditionally served neat in small glasses and shared during meals, celebrations, and special occasions. More than simply a spirit, Baijiu has long been part of Chinese dining, hospitality, and the ritual of bringing people together.

Why is Baijiu important in Chinese culture?

Baijiu is deeply connected to Chinese dining, celebration, and hospitality. For generations, it has been shared at family gatherings, weddings, business dinners, holidays, and important milestones.

Drinking Baijiu is often communal. Glasses are raised together, toasts are exchanged, and the act of drinking becomes a way of showing respect, welcoming guests, and strengthening relationships.

What does Baijiu taste like?

Baijiu has one of the broadest and most distinctive flavour profiles in the world of spirits.

Depending on how and where it is produced, Baijiu can express flavours ranging from tropical fruit, pineapple, and floral notes to fermented grain, herbs, spice, earthiness, savoury flavours, and umami.

Unlike spirits such as vodka or whisky, Baijiu does not have one defining taste. Different styles can taste dramatically different from one another, which is part of what makes exploring Baijiu so interesting.

For someone trying it for the first time, expect something bold, aromatic, complex, and unlike most Western spirits.

How is Baijiu traditionally served?

Baijiu is traditionally enjoyed neat and at room temperature, poured into small Baijiu glasses and shared alongside food.

Rather than being treated only as an after-dinner spirit, Baijiu is closely connected to the meal itself. It is commonly enjoyed through a series of toasts, with people drinking together throughout the occasion.

The small glass is intentional. Baijiu is powerful, often exceeding 50% ABV, and the experience is as much about the ritual, conversation, and people around the table as it is about the spirit itself.

The goal is not to Westernize Baijiu or replace tradition. It is to create another way into it.
